
After many of you guys have requested- here is my first recipe blog on my creation of the Dark chocolate oatmeal banana muffin.
As I venture into 2018, one my goals was to develop a better healthy lifestyle, and to find fun ways to bake but minus all the added sugar and oils. Baking has always been one of my hobbies, and even tho I am not an expert in this area, I try, and this time I found the secret ingredient!
I already gave it away on my Instagram post, but the secret ingredient of course LOVE (as I always say) but the second is secret ingredient is the AVOCADO.

This super food is packed with healthy fats that makes the muffins nice and moist without needing to add in any extra oil ~ Not even a drip. Avocado is packed with so many rich nutrients and I love putting on everything I eat. Not only is it totally Instagram worthy- but the vibrant green color gives your meal a kick punch. Many of you guys have asked me if you can taste it in the muffins, and the answer is no! It hides so well, and it truly is the secret ingredient behind this recipe.
This recipe is all about the naturals, and keeping baking as simple as it can be! I want to make it the most out of all the ingredients, and blend together different flavors and textures that will make you drool! The crunch of the almonds, and the moistness that the bananas give really give it the two in one. These are super healthy, and a great way to incorporate it into your breakfast, snack, and or dessert!

One of my guilty snack pleasures are dark chocolate. I lovvvvvee dark chocolate, and I can basically snack on it all day. I bought a 99% dark chocolate bar, and at first I found it very bitter (dirt tasting) but if you have it with a latte, the flavors are opened and makes it enjoyable. Tell me what are your favorite kinds of chocolates? I found a way to sneak dark chocolate into these muffins, because why not?
One reason why I love baking so much is that I can share it with others! I enjoy finding ways to bless and to show my love for others and giving people sweets really brightens up their day! If it is your best friends birthday- make the effort to bake for them! It really shows that you care, and that you crafted a gift with love and with your heart! <3 <3
One critique that I must mention is how the batter is on the stickier side, which made it stick to the paper. Next time I create this recipe- I will definitely just lightly oil the tin with some coconut oil, and bake it without the papers!
Dark Chocolate Banana Oatmeal Muffins

Yields 8 big + 12 little muffins
Ingredients
- 3 bananas (ripe + mashed)
-1 egg
-1 Avocado - Mashed
-1/4 cup of milk (Can be almond/soy- it is used to thin out the batter)
-3/4 cup of flour
-1/2 cup of oatmeal
-1/2 tsp baking soda + baking powder
-1/4 cup of unsweetned cocoa powder
-2 tbsp hot milk/ hot water to activate cocoa powder
- 1 tsp vanilla
-1tsp vanila
-1/4 tsp salt
Add Ins
- 2 tbsp Dark chocolate chips
-Handful of almonds crushed
- You can choose any kind of seeds/nuts/chocolate chips/fruits etc
- Leave some add ins on the side to sprinkle on top before baking
1) Preheat oven to 350F
2) In one bowl, mash bananas and avocado together. After mashed add in the egg/vanilla and mix well
3) Activate the cocoa powder with some hot water or milk (make sure all clumps are all separated) and add to wet ingredients, incorporate well
4) In a separate bowl mix dry ingredients - flour/oats/cinnamon/salt/baking powder/baking soda
5) Slowly mix the dry ingredients with the wet, and mix until combined
6) Add in milk to thin out the batter to a lava texture (you may adjust this to your liking)
7) Fold in dark chocolate chips and crushed almonds
8) Lin tins or grease tins with coconut oil, and fill 3/4 way
9) Sprinkle more crushed almonds and dark chocolate chips on the tops of your muffin
10) Bake for 30 minutes (add 10 more if it is still mushy)
And Voila

Enjoy these guilt free- and healthy muffins on the go! You can keep it in an airtight container for up to a week and or freeze them. I like to reheat my muffins in the microwave for 15 seconds when I enjoy them later !
