Roasted Sweet Potato Salad

Hello Friends!


I hope that your Monday has been productive, and filled with fun and more food! I know that most of the times Monday will feel like a drag, but I know that you will get through it! For me, I woke up super early today to brainstorm post ideas, and to whip up this recipe for you guys!


Are you guys a morning bird or a late owl? I struggle with this because sometimes I do end up staying late thinking of ideas, and studying, but my body is programmed to wake up at 7 which makes me a morning bird too! In general, I do like waking up earlier in the morning, because my body feels more refreshed, and also I feel like the day is stretched longer. One thing I enjoy doing in the morning is making a schedule of what my day would look like. I know you guys all have a busy life, but take your time to make a schedule. It relieves stress, and also you will be able to "check off" what you have done which makes you feel more productive!


I shared on my Instagram, that I hope you will use this recipe as some Monday motivation to eat cleaner. We all struggle with eating chips and all, but trust me, if you treat your body with good pure food, you will feel more energized and your body won't get that added exhaustion due to food comas.


This is a simple recipe, and roasting the sweet potato technique can be applied to any other veggies you lie ie cauliflower, potato, and so much more! Roasted sweet potatoes is something that you can eat as a snack, top it on your salad, or a side to your dinner. So please if you follow this recipe- tell me how it goes!!




I love the color of sweet potato!

Roasted Sweet Potato

1-2 Servings

- Large sweet potato

-1 tbsp olive oil

- 1/2 onion sliced

- Salt/Pepper

-1 tsp brown sugar

- Spices of choice: Cayenne pepper, chili pepper, curry powder, garlic powder,

-2 tbsp water


Directions

-1) Preheat oven to 350 deg

2) Dice sweet potatoes into cubes and slice onion

3) Toss it onto a pan and add in olive oil and add spices of choice. I like using chilli pepper cayenne pepper, salt/pepper, and sprinkle with brown sugar

4) Make sure all pieces are coated with seasoning, and pop it in the oven for 15 minutes

5) After 15 mins mix around the pieces, and add 2 tbsp of water to let it cook faster

6) Bake for another 15 mins, and turn on broil for 5 minutes to give it a crunch



To turn it into a salad...

- Rinse your favorite mixed greens along with other vegetables, and toss it with sweet potato.

- I choose cucumber, and shredded carrot

-Top it off with your favorite salad dressing
